SIR CHATEAU RELLE- BIFE

6 cracked peppercorns
4 cloves of garlic
3 tablespoons of dehydrated onions
1 tablespoon of smoked paprika
1/2 tablespoon of cumin
3 rolled and smashed jalepeno peepers
1/4 of olive oil
1/4 cup of lime juice
3 tablespoons of fresh chopped cilantro
 mix and place in a ziplock bag

1 3# sirlion roast (cooked mediem rare)
cut into  quarters and marinade for 3-6 hours
bake for 30 minutes until done, shred. Chop sirlion mincing near fine, and set aside

in a bowl, mix
2 tablespoons of Brandy
1 teaspoon of salt
1/4 teaspoon of cayeene
1/2 teaspoon of black pepper
 1 cup of cottage cheese
3 eggs
1/4 cup of paresean
1/2 of swiss cheese
1/2 cup of sauteed red peppers
1/2 cup of sauteed minced onions
1 minced garlic clove ( omit if you have enough garlic in the beef)
1/3 cup of sundried tomatos chopped
mix well.

6 cups of sourdough
rolled 1/4 inch thick
8 inches wideand 12 inches long

place dolips of cheese and beef mixture onto dough
brush around each mound with a eggwash mixture
fold and cut into squares and decorate the tops and bake until golden brown
serve with a feta, garlic and marinita sauce.......
